  • 4 cups Kale, chopped Massage with oil and salt to soften.
  • 2 cups Fall fruits (e.g., apples, pears), chopped Core and chop into bite-sized pieces.
Dressing Ingredients
  • 1 tablespoon Cider vinegar
  • 2 tablespoons Olive oil Divided; one for massaging kale.
  • 1 tablespoon Honey
  • 1 tablespoon Poppy seeds
  • 1 pinch Salt To taste.
  • 1 dash Pepper To taste.

Method
 

Preparation
  1. In a large bowl, massage the chopped kale with a drizzle of olive oil and a pinch of salt until it softens and wilts slightly.
  2. Core and chop the fruits into bite-sized pieces, enjoying their vibrant colors and aromas.
Dressing
  1. In a separate bowl, whisk together cider vinegar, olive oil, honey, poppy seeds, salt, and pepper.
Assembly
  1. Gently toss the kale with the chopped fruits and drizzle the dressing over just before serving.

Notes

For extra flavor, let the kale marinate before adding fruits. Feel free to add nuts for crunch.
