Ingredients
  

Bagel Filling
  • 5 slices bacon Cooked until crispy
  • 8 oz cream cheese, softened Room temperature
  • 1/2 cup shredded white cheddar
  • 1 cup shredded Monterey Jack, divided Reserve half for topping
  • 2 jalapeños, minced For the filling
  • 1 tsp garlic powder
  • Kosher salt to taste
  • Freshly ground black pepper to taste
Bagels
  • 3 bagels, halved Any type can be used
  • 1 jalapeño thinly sliced, for garnish

Method
 

Preparation
  1. Preheat the oven to 350 degrees F.
  2. In a large nonstick skillet over medium heat, cook the bacon until it’s crispy, about 8 minutes. Drain on a paper towel-lined plate and chop into pieces.
  3. In a large bowl, stir together the cream cheese, white cheddar, 1/2 cup of Monterey Jack, minced jalapeños, and garlic powder.
  4. Fold in the chopped bacon and season with salt and pepper.
Baking
  1. Place bagels cut side up on a baking sheet and spread each with the cream cheese mixture.
  2. Top with the remaining Monterey Jack cheese.
  3. Bake until warmed through and the cheese is melty, about 10 to 12 minutes.
  4. Garnish each bagel half with a slice of jalapeño and serve warm.

Notes

For more spice, add diced pickled jalapeños or hot sauce in the filling. Store leftovers in an airtight container for up to 3 days; reheat in the oven.
