  • 2 large egg whites room temperature
  • 1 teaspoon almond extract
  • 1 tablespoon Amaretto liqueur optional

Method
 

Preparation
  1. Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine almond flour, granulated sugar, and a pinch of salt.
  3. In a separate bowl, beat the egg whites until soft peaks form.
  4. Gently fold the beaten egg whites, almond extract, and Amaretto (if using) into the almond flour mixture until a dough forms.
  5. Using a small cookie scoop or teaspoon, form small balls of dough and roll them in powdered sugar.
  6. Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart.
  7. Lightly press the tops to flatten slightly.
  8. Bake in the preheated oven for 25-30 minutes, or until the edges are lightly golden.
Cooling
  1. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  2. Dust the cooled cookies with additional powdered sugar if desired and serve.

Store the amaretti cookies in an airtight container at room temperature for up to a week. For best results, ensure egg whites are at room temperature before whipping. You can customize flavors with hazelnut or vanilla extract, or try adding citrus zest.
