Preparation
- Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
- In a large bowl, combine almond flour, granulated sugar, and a pinch of salt.
- In a separate bowl, beat the egg whites until soft peaks form.
- Gently fold the beaten egg whites, almond extract, and Amaretto (if using) into the almond flour mixture until a dough forms.
- Using a small cookie scoop or teaspoon, form small balls of dough and roll them in powdered sugar.
- Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart.
- Lightly press the tops to flatten slightly.
- Bake in the preheated oven for 25-30 minutes, or until the edges are lightly golden.
Cooling
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
- Dust the cooled cookies with additional powdered sugar if desired and serve.
Notes
Store the amaretti cookies in an airtight container at room temperature for up to a week. For best results, ensure egg whites are at room temperature before whipping. You can customize flavors with hazelnut or vanilla extract, or try adding citrus zest.
