Preparation
- Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan and line it with parchment paper.
- In a large saucepan, melt the butter over medium heat. Stir in the granulated sugar and brown sugar until smooth.
- Beat in the eggs one at a time, followed by the vanilla extract.
- In a separate bowl, sift together flour, cocoa powder, salt, and baking powder. Gradually stir this mix into the butter mixture until just blended.
- Fold in the dark chocolate chips and fresh cherries.
- Spread half the batter into the prepared baking pan, layer with cherry preserves, and top with the remaining batter.
Baking
- Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the pan before cutting into squares.
- For an extra touch, drizzle with more cherry preserves and top with fresh cherries before serving.
Notes
Store leftovers in an airtight container for up to four days. They can be frozen for about three months. Microwave for a few seconds to restore texture.
