Ingredients
  

For the Filling
  • 1 cup mascarpone cheese
  • 1 cup heavy cream Beat until soft peaks form
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup cherries (chopped) Reserve some for topping
For Assembly
  • 1 cup brewed coffee (cooled) Add a splash of liqueur if desired
  • 1 package ladyfingers Gently dip in coffee
  • 1 tablespoon chocolate cocoa powder For dusting the top

Method
 

Preparation
  1. In a mixing bowl, beat together the mascarpone cheese, heavy cream, powdered sugar, and vanilla extract until it reaches soft peaks.
  2. In a shallow dish, pour your cooled brewed coffee.
  3. Dip each ladyfinger into the coffee and lay them in a single layer in a serving dish.
  4. Spread half of the mascarpone mixture over the ladyfingers.
  5. Sprinkle half of the chopped cherries over the mascarpone layer.
  6. Repeat the layering with the remaining ladyfingers, mascarpone mixture, and cherries.
Finishing Touch
  1. Dust the top of the tiramisu with cocoa powder and refrigerate for at least 4 hours, preferably overnight.

Notes

Can add extra cherries or chocolate shavings for serving. Store leftovers in the fridge for up to 3 days.
