Ingredients
  

For the Cream Layer
  • 3 large eggs, separated
  • 0.5 cup caster sugar
  • 2 tablespoons caster sugar extra
  • 300 g mascarpone
For the Coffee Dip
  • 300 ml strong black coffee, cooled
  • 0.25 cup Marsala
  • 2 tablespoons caster sugar extra
For Assembly
  • 9 pieces leftover hot cross buns halved horizontally
  • Dark cocoa powder to dust

Method
 

Preparation
  1. Whisk the egg yolks with 1/4 cup (55g) of sugar in a large bowl until pale and creamy.
  2. Incorporate the mascarpone into the egg yolk mixture and stir until combined.
  3. In a separate bowl, whip the egg whites with the other 1/4 cup (55g) of sugar until stiff peaks form.
  4. Gently fold the egg white mixture into the mascarpone blend.
Coffee Mixture
  1. In a shallow bowl, combine the cooled coffee, Marsala, and the extra 2 tablespoons of sugar.
Assembly
  1. Halve the hot cross buns horizontally and arrange half in a baking dish, cut-side up.
  2. Drizzle half of the coffee mixture over the buns and press down gently.
  3. Spoon half of the cream mixture over the buns.
  4. For the second layer, dip the remaining buns in the coffee mixture and layer them cut-side down.
  5. Add the rest of the cream mixture on top.
  6. Chill for 2-3 hours or preferably overnight.
  7. Dust the top with cocoa using cardboard strips to create a cross pattern before serving.

Notes

For a twist, sprinkle spices like cinnamon or nutmeg between layers. Consider adding orange zest to the mascarpone for a citrus kick.
