Preparation
- In a large bowl, mix mascarpone cheese, sugar, and vanilla until smooth and creamy.
- With the mixer on low, slowly pour in the cold heavy whipping cream, then increase speed and beat until soft peaks form.
- For the ganache, place chopped chocolate and a pinch of salt in a bowl, pour hot heavy cream over, let sit for 5 minutes then stir until smooth.
- For the hot chocolate soak, combine hot espresso, chocolate chunks, and hot milk in a bowl, whisk until smooth.
Assembly
- Quickly dip each ladyfinger into the hot chocolate soak, then arrange in a 9x9-inch dish.
- Spread half of the mascarpone cream over layers of ladyfingers, repeat with more soaked ladyfingers and remaining cream.
- Pour ganache over the top layer, smooth gently, cover, and refrigerate for at least 8 hours.
- Dust with cocoa powder before serving.
Notes
Allowing to set overnight enhances flavors. For variations, add peppermint extract or orange zest.
