Ingredients
  

For the Chicken
  • 1 lb chicken breasts, boneless, skinless
  • 1/4 cup honey
  • 2 limes, juiced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
For the Rice and Avocado
  • 1 cup rice, uncooked
  • 1 large avocado, diced
  • 1/2 cup cilantro, chopped
  • 1/4 cup sour cream

Method
 

Preparation
  1. In a bowl, whisk together honey, lime juice, chili powder, cumin, salt, and pepper.
  2. Coat the chicken breasts in the marinade and let them sit for at least 30 minutes.
  3. Prepare 1 cup of rice according to package directions.
Cooking
  1. Heat your grill or skillet over medium heat. Cook the marinated chicken for about 6–7 minutes on each side.
  2. Let the chicken rest before slicing.
Assembly
  1. In a bowl, combine the cooked rice, diced avocado, chopped cilantro, and sour cream. Fold until well mixed.
  2. Spoon the creamy avocado rice onto plates, top with sliced honey lime chicken, and drizzle with extra lime juice.

Notes

Marinate the chicken at least 30 minutes, or up to 2 hours, for the best flavor. Use slightly underripe avocado to keep its shape when mixing; ripened just-right avocados make it creamier. For added heat, add a pinch of cayenne to the marinade.
