  • 2 cups all-purpose flour
  • 2 teaspoons ground ginger Fresh ginger can be used optionally.
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
Wet Ingredients
  • ½ cup unsalted butter, softened Ensure it's at room temperature.
  • ¾ cup honey Use quality honey for best flavor.
  • ½ cup brown sugar
  • 2 large eggs Should be at room temperature.
  • ½ cup milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon fresh ginger (grated, optional) Enhances spiciness.

Method
 

Preparation
  1. Preheat your oven to 170°C (340°F) and grease an 8-inch cake pan.
  2. In a bowl, mix all-purpose flour, ground ginger, ground cinnamon, nutmeg, baking powder, baking soda, and salt; set aside.
  3. Cream the softened butter and brown sugar until light and fluffy.
  4. Add honey to the butter and sugar mixture, mixing until well combined.
  5. Beat in the eggs one at a time, then incorporate vanilla extract and grated ginger.
  6. Gradually fold in the dry ingredients, alternating with milk until the batter is smooth.
Baking
  1. Pour the batter into the prepared pan and level the top.
  2. Bake for 40–45 minutes, or until a skewer inserted comes out clean.
  3. Let the cake cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.

Notes

For serving, this cake pairs wonderfully with whipped cream or honey. Dust with powdered sugar and cinnamon, or serve with vanilla ice cream. Store in an airtight container at room temperature or freeze individual slices for later use.
