  • 130 ml Lemon juice Use fresh lemon juice for best flavor.
  • 1 piece Zest of lemon Zest provides additional flavor.
  • 3 large Egg yolks Use fresh eggs.
  • 1 large Whole egg Adds richness to the curd.
  • 150 g Sugar Granulated sugar works well.
  • 80 g Butter Make sure to use unsalted butter.

Method
 

Preparation
  1. In a medium bowl, whisk together the egg yolks and sugar until smooth and creamy.
  2. Add fresh lemon juice and lemon zest, blending into the egg mixture.
Cooking
  1. Pour the mixture into a saucepan and place over low to medium heat, stirring constantly.
  2. Continue stirring for 10-15 minutes until the curd thickens to a custard-like texture.
  3. Remove from heat and stir in the butter until melted and integrated.
Cooling and Storage
  1. Let the lemon curd cool at room temperature, then transfer to a jar or container.
