Preparation
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together flour, baking powder, and salt.
- In a separate bowl, cream the softened butter and granulated sugar until light and airy.
- Add the egg and vanilla extract, blending into a smooth batter.
- Gradually fold in the dry ingredients until a cohesive dough forms.
- Divide the dough into three equal parts: one plain, one dyed red, and one dyed green.
- Roll each portion into rectangles between sheets of parchment paper.
Assembly
- Layer the dough: start with plain, add red, and finally green, pressing gently to adhere.
- Roll the layered dough tightly into a log, wrap in plastic, and chill in the refrigerator for at least 1 hour.
Baking
- Slice the chilled log into 1/4 inch thick cookies and arrange on a baking sheet.
- Bake for 10 to 12 minutes, until just set.
- Let cool and dust with powdered sugar before serving, if desired.
Notes
Store cookies in an airtight container at room temperature for up to a week. If dough is too sticky, chill longer. Experiment with colors for different seasons.
