  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 drop red gel food coloring For vibrant color.
  • 1 drop green gel food coloring For vibrant color.
  • Powdered sugar for dusting Optional, for serving.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In a separate bowl, cream the softened butter and granulated sugar until light and airy.
  4. Add the egg and vanilla extract, blending into a smooth batter.
  5. Gradually fold in the dry ingredients until a cohesive dough forms.
  6. Divide the dough into three equal parts: one plain, one dyed red, and one dyed green.
  7. Roll each portion into rectangles between sheets of parchment paper.
Assembly
  1. Layer the dough: start with plain, add red, and finally green, pressing gently to adhere.
  2. Roll the layered dough tightly into a log, wrap in plastic, and chill in the refrigerator for at least 1 hour.
Baking
  1. Slice the chilled log into 1/4 inch thick cookies and arrange on a baking sheet.
  2. Bake for 10 to 12 minutes, until just set.
  3. Let cool and dust with powdered sugar before serving, if desired.

Notes

Store cookies in an airtight container at room temperature for up to a week. If dough is too sticky, chill longer. Experiment with colors for different seasons.
