Preparation
- Preheat your oven to 350°F (175°C) and grease an 8-inch baking pan.
- Blend the rolled oats in a blender until they resemble oat flour.
- In a large bowl, mash the ripe bananas until smooth.
- Whisk in the eggs, milk, honey or maple syrup, and vanilla extract until well combined.
- Gently fold in the blended oats, cocoa powder, baking powder, and a pinch of salt.
- Mix until thoroughly combined, then fold in the chopped walnuts and dark chocolate chips if desired.
- Pour the batter into the prepared baking pan, smoothing the top with a spatula.
Baking
- Bake for 25-30 minutes, or until the center is just set.
- Allow it to cool for at least 15 minutes before slicing and serving.
Notes
Serve warm or at room temperature, ideally with a dollop of cream or ice cream. To store, keep in an airtight container at room temperature for up to three days, or refrigerate for up to a week. Slices can be frozen for up to three months.
