Ingredients
  

For the Dough
  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup coconut sugar or brown sugar
  • 1/4 cup unsweetened applesauce Can be substituted with mashed bananas or pumpkin puree.
  • 1/4 cup almond milk Use any milk of choice.
  • 1 teaspoon vanilla extract
  • 1/4 cup melted coconut oil
For the Coating
  • 1/4 cup sugar Mixed with 1 teaspoon cinnamon for coating.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the whole wheat flour, baking powder, cinnamon, salt, and coconut sugar. Whisk to combine.
  3. In a separate bowl, whisk together the applesauce, almond milk, vanilla extract, and melted coconut oil.
  4. Gradually add the wet mixture to the dry ingredients, stirring until just combined.
  5. Drop spoonfuls of the batter onto the prepared baking sheet and shape them into small bites.
Baking
  1. Bake for 10-12 minutes or until lightly golden.
  2. While warm, roll the baked churro bites in the cinnamon-sugar mixture to coat.

Notes

Serve warm. For a fun experience, set up a DIY churro station with various dipping sauces like chocolate or caramel.
