Ingredients
  

For the cake
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 1 can (20 ounces) crushed pineapple in juice
  • 1/2 cup unsalted butter
For the frosting
  • 1 package (8 ounces) cream cheese
  • 1 1/2 cups confectioners sugar
Optional toppings
  • 1 cup chopped nuts (Walnuts or pecans)
  • coconut flakes

Method
 

Preparation
  1. Preheat oven to 350 degrees F (175 degrees C) and grease a 9x13 inch baking pan.
  2. In a large bowl, mix together the flour, sugar, baking soda, salt, and eggs.
  3. Add crushed pineapple and its juice, and vanilla extract. Stir gently until smooth.
  4. Pour the batter into the prepared pan.
Baking
  1. Bake for 35-40 minutes, or until golden brown and a toothpick comes out clean.
Frosting
  1. For the cream cheese frosting, beat the softened butter and cream cheese with vanilla until creamy.
  2. Gradually add confectioners sugar, beating until light and spreadable.
  3. Spread the frosting evenly over the warm cake.
  4. Garnish with chopped nuts and coconut flakes if desired.
  5. Let the cake cool completely before slicing and serving.

Notes

Cover tightly and refrigerate for up to 4 days. For longer life, wrap slices individually and freeze up to 2 months. To serve, slice generous squares warm or chilled. Pair with cold-brewed coffee or ginger-lime soda.
