Preparation
- Preheat the oven to 425°F (220°C) and line a large sheet pan with parchment paper.
- Chop the chicken into bite-sized pieces and toss them with olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper.
- Chop the red and yellow bell peppers, red onion, and zucchini into even pieces.
Sauce Preparation
- Whisk together soy sauce, honey, pineapple juice, brown sugar, minced garlic, grated ginger, and rice vinegar in a bowl.
- In a separate bowl, mix cornstarch with water to create a slurry, then add it to the sauce.
Cooking
- Spread the chicken, veggies, and pineapple on the prepared sheet pan without overcrowding.
- Pour the sauce over everything and toss gently to coat.
- Bake for 20-25 minutes, stirring halfway through, until the chicken's internal temperature reaches 165°F (74°C).
- Broil for an additional 2-3 minutes for caramelization.
Serving
- Serve the Hawaiian Chicken with sesame seeds, green onions, cilantro, and lime wedges.
Notes
You can swap chicken for shrimp or tofu, add more veggies, and drizzling extra sauce can really enhance the dish.
