Ingredients
  

For the Crust
  • 1 cup Oreo Crumbs Crushed Oreos for crust
  • 2 1/2 tbsp Butter, Melted To bind the crust ingredients
For the Cheesecake Filling
  • 2 8 oz Cream Cheese, Softened Make sure it's softened for easy mixing
  • 1/2 cup Sugar Adjust for desired sweetness
  • 2 large Eggs Important for texture
  • 1 tsp Vanilla Add for flavor
  • 1 drop Neon Green Food Coloring For festive color

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with festive liners.
  2. In a food processor, pulse about 10-11 Oreos until finely crushed. Mix in melted butter until combined.
  3. Divide the Oreo mixture among the cupcake liners and firmly press down to form a crust.
  4. In a mixing bowl, beat together softened cream cheese and sugar until smooth.
  5. Add eggs and vanilla, mixing until well combined.
  6. Stir in the neon green food coloring until evenly mixed.
  7. Spoon about 1/4 cup of the cheesecake filling into each crust.
Baking
  1. Bake for 15 to 17 minutes until the centers jiggle slightly.
  2. Let the cheesecakes cool in the pan, then refrigerate until firm.
Serving
  1. Serve chilled, topped with whipped cream and festive sprinkles or crushed candy canes.

Notes

For best flavor, allow cream cheese to soften longer. Don’t over-bake; the centers should remain slightly jiggly.
