Preparation
- Preheat your oven to 350°F (175°C) and line a cupcake pan with festive liners.
- In a food processor, pulse about 10-11 Oreos until finely crushed. Mix in melted butter until combined.
- Divide the Oreo mixture among the cupcake liners and firmly press down to form a crust.
- In a mixing bowl, beat together softened cream cheese and sugar until smooth.
- Add eggs and vanilla, mixing until well combined.
- Stir in the neon green food coloring until evenly mixed.
- Spoon about 1/4 cup of the cheesecake filling into each crust.
Baking
- Bake for 15 to 17 minutes until the centers jiggle slightly.
- Let the cheesecakes cool in the pan, then refrigerate until firm.
Serving
- Serve chilled, topped with whipped cream and festive sprinkles or crushed candy canes.
