Ingredients
  

Brownie Base
  • ½ cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ teaspoon peppermint extract (optional) optional for flavor enhancement
  • ½ cup all-purpose flour
  • ¼ teaspoon salt
  • Green gel food coloring
  • 1–2 teaspoons matcha powder or pistachio pudding mix for flavor and color
Cookie Dough
  • ½ cup unsalted butter, softened
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour, heat-treated essential for safety in raw dough
  • ½ cup mini chocolate chips
Glaze
  • 1 cup white chocolate chips or candy melts
  • ¼ cup heavy cream
  • Green gel food coloring
  • 1 teaspoon pistachio pudding powder or matcha powder (optional) for flavor enhancement
  • Mini chocolate chips for topping for garnish

Method
 

Preparation
  1. Preheat oven to 350°F (175°C).
  2. Whisk melted butter and sugar together, then add eggs and vanilla.
  3. Mix in flour, salt, green food coloring, and matcha or pistachio powder until smooth.
Baking
  1. Pour batter into a lined square pan and bake for 18–20 minutes.
  2. Let the brownies cool completely, then cut into thick round discs using a cutter.
Cookie Dough Preparation
  1. Cream softened butter and both sugars until fluffy.
  2. Add milk and vanilla, then fold in heat-treated flour and mini chocolate chips until soft and moldable.
Assembling
  1. Scoop cookie dough into half-sphere molds or shape by hand into smooth domes.
  2. Freeze for 20 minutes until firm.
  3. Place each chilled cookie dough dome onto a brownie base and press gently.
Making the Glaze
  1. Heat heavy cream until warm, pour over white chocolate chips, and stir until silky smooth.
  2. Add green food coloring and optional pistachio or matcha powder until you achieve the desired soft pastel green color.
Finishing Touches
  1. Spoon the glaze over each dome, allowing it to drip naturally down the sides.
  2. Top with mini chocolate chips while the glaze is still soft.
  3. Chill for 15–20 minutes until set.

Notes

For longer storage, freeze them with parchment paper between layers. Experiment with adding espresso powder to the brownie mix for a deeper flavor.
