Ingredients
  

Crust and Custard Base
  • 1 package pre-made pie crust
  • 2 cups milk Heated until hot but not boiling.
  • 3/4 cup granulated sugar
  • 4 large egg yolks
  • 1/4 cup cornstarch
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon salt
Topping
  • 1/2 cup pine nuts Can be lightly roasted for enhanced flavor.
  • to taste powdered sugar For dusting before serving.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Fit the pie crust into a tart pan and prick the bottom with a fork.
Making the Custard
  1. In a saucepan, heat the milk over medium heat until hot but not boiling.
  2. In a separate bowl, whisk together the granulated sugar, egg yolks, cornstarch, vanilla, and salt.
  3. Gradually whisk the hot milk into the egg mixture until smooth.
  4. Return this mixture to the saucepan and cook over medium heat, stirring constantly until it thickens.
Baking
  1. Pour the custard into the prepared pie crust and sprinkle the pine nuts on top.
  2. Bake for 30-35 minutes or until the edges of the crust are golden.
Serving
  1. Allow to cool, then dust with powdered sugar before serving.

Notes

Store any leftovers in the refrigerator for up to three days. For extra flavor, consider adding nutmeg or cinnamon.
