Coating

Preparation
  1. In a medium bowl, combine softened goat cheese, rosemary, thyme, and a pinch of salt. Mix until smooth and well blended.
  2. Roll the mixture into small 1-inch balls using your hands.
  3. Place chopped nuts on a plate and roll each cheese ball until fully coated.
  4. Arrange on a serving platter and drizzle generously with honey.
  5. Refrigerate for 30 minutes if desired to firm up before serving.

  2. Let goat cheese sit at room temperature for 15-20 minutes before mixing for easier shaping.

Notes

Keep the bites chilled in an airtight container for up to 24 hours; the nuts will remain crisp and the cheese will hold its shape. If storing longer, pack without the honey drizzle and add it just before serving to preserve texture and shine.
