  • 1 3/4 cups all-purpose flour
  • 3/4 cup sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
Wet Ingredients
  • 1 each egg, beaten
  • 3/4 cup champagne (cold or room temperature)
  • 1/2 cup sour cream
  • 1/4 cup Simple Truth Orange Juice
  • 1 teaspoon orange extract (optional)
  • 1/4 cup cooking oil
  • Zest 1 orange
Glaze Ingredients
  • 1/2 cup powdered sugar
  • 2 teaspoons Simple Truth Orange Juice
  • 1 teaspoon champagne (cold or room temperature)
  • to taste orange zest (for garnish)

Method
 

Preparation
  1. In a medium mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate bowl, combine the beaten egg with the champagne, sour cream, orange juice, and orange extract. Add the oil and the zest of one orange.
  3. Pour the wet mixture over the dry ingredients, stirring gently until just blended.
  4. Transfer the batter to a greased 8 by 4 by 2 inch bread pan.
Baking
  1. Bake in a preheated oven at 350 degrees Fahrenheit for 50-55 minutes until golden brown.
  2. Cool completely before glazing.
Glazing
  1. Whisk together the powdered sugar, orange juice, and champagne until smooth.
  2. Drizzle the glaze over the cooled bread and garnish with orange zest.

Notes

For a more pronounced citrus flavor, increase the zest or add more orange juice. Avoid overmixing for a moist loaf.
