Cream Filling Ingredients
  • 1 cup cream cheese, softened
  • 1 cup powdered sugar
  • 0.5 teaspoon vanilla extract (for filling)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a spacious bowl, mix together the oatmeal, flour, baking soda, ginger, cinnamon, cloves, and salt.
  3. In another bowl, cream together the softened butter, brown sugar, and granulated sugar until a light and fluffy texture is achieved.
  4. Beat in the egg and vanilla extract until smooth.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Drop spoonfuls of dough onto a baking sheet lined with parchment paper, leaving enough space between each cookie.
Baking
  1. Bake for 10-12 minutes, or until the edges are golden brown.
  2. Let the cookies cool completely on a wire rack.
Making the Filling
  1. Beat together the cream cheese, powdered sugar, and vanilla extract until smooth.
  2. Spread the creamy filling between two cookies to create a sandwich.

Notes

Tip: For extra spice, add a pinch of nutmeg or mace to the flour mixture. If you prefer a chewier texture, let the cookies rest before transferring them to the rack. Use a handheld mixer for beating the cream cheese filling for a light, airy consistency.
