Preparation
- Preheat your oven to 350°F (175°C). Grease and flour a round cake pan.
- In a large bowl, whisk together the flour, baking powder, baking soda, salt, and spices.
- In another bowl, beat together the sour cream, granulated sugar, light brown sugar, softened butter, canola oil, molasses, eggs, vanilla extract, and hot water.
- Gradually fold the dry mixture into the wet mixture until just combined. Do not overmix.
- Pour the batter into the prepared cake pan and smooth the surface.
Baking
- Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Frosting
- In a separate bowl, beat together the cream cheese, butter, and light brown sugar until smooth.
- Gradually add the powdered sugar, using heavy cream to adjust the consistency as needed.
Serving
- Once cooled, frost the cake with cream cheese frosting and sprinkle with ground cinnamon.
Notes
Ensure ingredients are at room temperature for easier mixing. For a heartier texture, use some whole wheat flour. You can also add chopped candied ginger or pecans for extra flavor.
