  • 1 cup unsalted butter (melted and cooled) Ensure the butter is adequately cooled.
  • 1.5 cups packed light brown sugar
  • 2 large eggs (room temperature)
  • 2 tbsp molasses May substitute with dark corn syrup or honey.
  • 1 tsp vanilla extract
  • 2.5 cups all-purpose flour For gluten-free, use a gluten-free flour blend.
  • 2 tsp ground cinnamon Consider adding nutmeg or cardamom for variation.
  • 1 tbsp ground ginger
  • 1 tsp baking powder
  • 0.5 tsp kosher salt
  • confectioners' sugar for dusting Use a fine mesh sieve for an even coating.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Line a 9x9-inch baking dish with parchment paper.
  2. In a large bowl, mix the melted butter with the packed light brown sugar until smooth.
  3. Incorporate the eggs, molasses, and vanilla extract into the butter and sugar mixture.
Mixing Dry Ingredients
  1. In a separate bowl, whisk together the all-purpose flour, ground ginger, ground cinnamon, baking powder, and kosher salt.
Combining Ingredients
  1. Gradually fold the dry ingredients into the wet mixture until fully combined.
  2. Pour the batter into the prepared baking dish and spread evenly.
Baking
  1. Bake in the preheated oven for 30-35 minutes, until the edges are set and the center no longer jiggles.
  2. Allow to cool completely before dusting with confectioners' sugar.
Serving
  1. Cut into squares and serve, optionally garnished with fresh mint or cranberries.

These brownies can be stored in an airtight container for up to five days at room temperature or refrigerated for a week or more.
