For the Cookies
  • 1/2 cup softened butter room temperature
  • 1/2 cup vegetable oil
  • 1 cup brown sugar packed
  • 1 large egg room temperature
  • 1 tsp vanilla
  • 2 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 1/2 cups flour 325 grams
For the Streusel
  • 1/4 cup softened butter room temperature
  • 1/4 cup brown sugar packed
  • 1/3 to 1/2 cup flour for streusel
  • 1/2 tsp cinnamon for streusel
  • pinch salt for streusel
For the Icing
  • 1/2 cup powdered sugar
  • 1 tbsp milk
  • splash vanilla

Method
 

Preparation
  1. Preheat your oven to 350 F.
  2. In a mixing bowl, blend softened butter, oil, and brown sugar until smooth and fluffy.
  3. Add the egg and vanilla, mixing well.
  4. Gradually stir in cinnamon, baking soda, baking powder, salt, and flour until just combined.
  5. In a separate bowl, mix butter, brown sugar, flour, cinnamon, and salt for the streusel until crumbly.
  6. Use a large cookie scoop to form dough balls on a lined baking sheet, creating an indent on top of each.
  7. Fill the indent with streusel.
  8. Bake for 10-12 minutes until golden.
Icing
  1. For the icing, combine powdered sugar, milk, and vanilla until smooth.
  2. Drizzle over cooled cookies.

Notes

Use room-temperature ingredients for easy blending. Avoid overmixing after adding flour. If your streusel seems too dry, add a tiny pat of butter until it clumps. Let cookies cool completely before drizzling the icing to maintain a neat appearance.
