  • 200 g spaghetti or pasta of your choice
  • 200 g peeled shrimp Use fresh or thawed
  • 150 g sliced mushrooms
  • 3-4 cloves garlic, finely chopped Adjust according to taste
  • 3 tablespoons extra virgin olive oil Use high-quality oil for best flavor
  • A pinch of chili flakes (optional)
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped Add at the last moment for freshness
  • 1/2 piece lemon, juice (optional) Squeeze for acidity

Method
 

Preparation
  1. Boil pasta in salted water until al dente. Reserve 1/2 cup of the cooking water and drain the pasta.
  2. Heat olive oil in a large skillet over medium heat. Add garlic and chili flakes (if using) and sauté for about 30 seconds until fragrant.
  3. Add shrimp and cook for 2-3 minutes until pink.
  4. Add mushrooms and sauté for another 4-5 minutes until soft and golden.
  5. Add the cooked pasta to the skillet and mix well. If necessary, add a splash of the reserved cooking water to create a smooth sauce.
  6. Season with salt, pepper, and fresh parsley. Add a squeeze of lemon for an extra touch of freshness, if desired.
  7. Serve hot with a drizzle of olive oil and grated cheese (optional).

Notes

Cool to room temperature within an hour, then store in an airtight container for up to 2 days. Reheat gently in a skillet over low heat with a splash of water or olive oil to restore silkiness.
