Ingredients
  

Brownie Bites
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/3 cup cocoa powder
  • 1/2 cup all purpose flour
  • 1/4 tsp salt
  • 1/4 tsp baking powder
Galaxy Glaze
  • 1 and 1/2 cups powdered sugar
  • 2 to 3 tbsp milk Adjust for consistency
  • 1/2 tsp vanilla extract
  • Gel food coloring (dark blue, purple, pink, black)
  • 1/2 tsp edible shimmer dust or pearl dust
  • Edible glitter or star shaped sprinkles

Method
 

Preparation
  1. Preheat oven to 350F (175C) and grease a mini muffin tin.
  2. In a bowl, whisk together melted butter and sugar until smooth.
  3. Add eggs and vanilla, mixing until combined.
  4. Stir in cocoa powder, flour, salt, and baking powder.
  5. Spoon batter into the mini muffin tin, filling each about 3/4 full.
Baking
  1. Bake for 12 to 15 minutes, until the edges are set.
  2. Let cool completely.
Glazing
  1. In a bowl, whisk together powdered sugar, milk, and vanilla until smooth for the glaze.
  2. Divide the glaze into separate bowls and tint each one dark blue, purple, and pink.
  3. Drop the colors back into one bowl and swirl gently with a toothpick.
  4. Dip the tops of each brownie bite into the galaxy glaze, letting excess drip off.
  5. Sprinkle with edible glitter and star shaped sprinkles.
  6. Let the glaze set for 15 to 20 minutes before serving.

Notes

Serve on a matte black plate to make the colors pop. Store in an airtight container for up to 2 days at room temperature or up to 5 days in the refrigerator. For best results, let the glaze set at room temperature.
