  • 1 box fudge brownie mix Plus ingredients required on the brownie mix box (typically eggs, oil, and water)
  • 2 cups mini marshmallows
Frosting
  • 4 tablespoons unsalted butter, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk
Topping
  • 2 cups sweetened shredded coconut
  • Pink food coloring As needed for coloring the coconut

Preparation
  1. Preheat the oven according to the brownie mix package directions. Grease and line an 8×8-inch baking pan with parchment paper.
  2. Prepare the brownie batter according to the package instructions, adding the required eggs, oil, and water.
  3. Pour the batter into the prepared pan and bake until a toothpick inserted near the center comes out with a few moist crumbs, about 28 to 32 minutes.
Adding Marshmallows
  1. Remove the brownies from the oven and immediately sprinkle the mini marshmallows evenly over the top.
  2. Return the pan to the oven for a quick 2 to 3 minutes until the marshmallows are soft and puffy.
  3. Gently spread the melted marshmallows into an even layer with an offset spatula or greased spoon.
  4. Allow the brownies to cool completely.
Making the Frosting
  1. In a medium bowl, beat together the softened butter, powdered sugar, vanilla extract, and milk until smooth and fluffy.
  2. Spread the frosting evenly over the marshmallow layer.
Preparing the Coconut Topping
  1. Place the shredded coconut in a large zip-top bag or bowl. Add a few drops of pink food coloring and toss until evenly coated.
  2. Sprinkle the pink coconut generously over the frosted brownies, pressing lightly to adhere.
Final Steps
  1. Refrigerate the brownies for at least 1 hour before slicing into squares.
  2. Store leftovers in an airtight container in the refrigerator for up to 4 days.

Notes

Don’t skip the refrigeration step for clean cuts! Feel free to experiment with different food coloring. For an extra touch, drizzle caramel sauce on top before adding coconut.
