Preparation
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine the sugar, yogurt, vegetable oil (or applesauce), eggs, and vanilla. Mix until smooth.
- Add the salt and baking powder, then sift in the flour and mix until just combined.
- Fold in the Fruity Pebbles gently.
Baking
- Spray a loaf pan with non-stick cooking spray.
- Pour the batter into the pan and sprinkle additional Fruity Pebbles on top.
- Bake for 45-55 minutes, or until a toothpick inserted comes out clean.
Serving
- Slice and enjoy warm, optionally with butter or honey.
Notes
For added flavor, try mixing in citrus zest or cream cheese. Store wrapped tightly in plastic wrap for a few days or freeze for up to three months.
