  • 1 1/4 cup sugar
  • 1 cup plain Greek yogurt
  • 1/2 cup vegetable oil or unsweetened applesauce Unsweetened applesauce can be used for a lighter option.
  • 3 large eggs
  • 1/2 tsp vanilla extract
Dry Ingredients
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 1 1/2 cups all-purpose flour
Cereal
  • 2 cups Fruity Pebbles or other Post cereals Feel free to experiment with different cereals.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the sugar, yogurt, vegetable oil (or applesauce), eggs, and vanilla. Mix until smooth.
  3. Add the salt and baking powder, then sift in the flour and mix until just combined.
  4. Fold in the Fruity Pebbles gently.
Baking
  1. Spray a loaf pan with non-stick cooking spray.
  2. Pour the batter into the pan and sprinkle additional Fruity Pebbles on top.
  3. Bake for 45-55 minutes, or until a toothpick inserted comes out clean.
Serving
  1. Slice and enjoy warm, optionally with butter or honey.

Notes

For added flavor, try mixing in citrus zest or cream cheese. Store wrapped tightly in plastic wrap for a few days or freeze for up to three months.
