Ingredients
  

For the cookies
  • 10 tablespoons unsalted butter, room temperature Ensure butter is at room temperature for optimal creaming.
  • 1/2 cup granulated sugar
  • 2 cups Fruity PEBBLES Cereal, divided 1/2 cup for mixing in and 1/2 cup for rolling.
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 8 large marshmallows Place in the center of each dough ball.

Method
 

Preparation
  1. Preheat your oven to 350°F.
  2. In a large bowl, cream together the softened butter, sugar, and 1/2 cup of Fruity PEBBLES cereal for 2 to 3 minutes on medium speed.
  3. Introduce the egg and vanilla extract, stirring until the mixture is well combined.
  4. Gradually fold in the flour, baking soda, and salt, mixing until the dry and wet ingredients are fully united.
  5. Gently whisk in 1 cup of Fruity PEBBLES cereal.
Forming Cookies
  1. Scoop a 3 to 4 tablespoon ball of dough, flatten it, and place a marshmallow in the center.
  2. Envelop the marshmallow with the dough, sealing it completely.
  3. Roll your dough ball in the remaining 1/2 cup of cereal and place it on a baking sheet, ensuring they are spaced 3 inches apart.
Baking
  1. Bake on the middle rack for 8 to 11 minutes, or until the marshmallows start to peek through the cracks.
  2. Allow cookies to cool on the cookie sheet for a few moments before transferring to a wire rack to cool completely.

Notes

Serve warm with a glass of milk, and consider adding a pinch of cinnamon for extra flavor. Store in an airtight container at room temperature for up to a week.
