Ingredients
  

Sugar Cookie Base
  • 1/2 cup butter softened
  • 1/2 cup granulated sugar
  • 2 tbsp brown sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 3/4 tsp baking powder
  • 1 1/4 cup all purpose flour
  • 1/4 tsp salt
Cream Cheese Frosting
  • 4 oz cream cheese softened
  • 4 tbsp butter salted or unsalted, softened
  • 1 tsp vanilla extract
  • 1 cup powdered sugar
Toppings
  • 1 cup fresh berries and fruit of choice such as strawberries, blueberries, kiwi, peaches, or blackberries

Method
 

Prepare Cookie Base
  1. Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, letting the paper hang over the sides for easy removal.
  2. In a mixing bowl, cream together 1/2 cup butter, 1/2 cup granulated sugar, and 2 tablespoons brown sugar until light and fluffy—about 2–3 minutes.
  3. Beat in 1 large egg and 2 teaspoons vanilla extract until combined.
  4. In a separate bowl, whisk together 1 1/4 cups all-purpose flour, 3/4 teaspoon baking powder, and 1/4 teaspoon salt.
  5. Gradually add the dry ingredients to the wet, mixing just until incorporated.
  6. Press the dough evenly into the prepared pan, smoothing it with your fingers or the back of a spatula.
  7. Bake for 15–18 minutes, or until the edges are lightly golden and the center is set. Let the cookie base cool completely in the pan on a wire rack.
Make Cream Cheese Frosting
  1. In a bowl, beat 4 ounces softened cream cheese and 4 tablespoons softened butter together until smooth and creamy.
  2. Add 1 teaspoon vanilla extract, then gradually beat in 1 cup powdered sugar until the frosting is silky and spreadable.
Assemble Bars
  1. Once the cookie base is fully cool, spread the cream cheese frosting in an even layer over the top.
  2. Arrange fresh berries and sliced fruit of your choice on top.
  3. Chill in the refrigerator for at least 30 minutes to set the frosting. Then lift the slab from the pan using the parchment overhang and slice into bars.

Notes

For a prettier finish, gently press the fruit into the frosting. Store leftovers in an airtight container in the refrigerator for up to 4 days. To avoid sogginess, use firm and dry fruit.
