Ingredients
  

Brownie Base
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/3 cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 1 stick unsalted butter melted
  • 2 teaspoons coffee extract or 1 tablespoon instant coffee
  • 1 cup granulated sugar
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
Frosting
  • 2 to 4 tablespoons heavy whipping cream
  • 1 1/2 teaspoons instant coffee granules
  • 2 cups powdered sugar
  • 1/3 cup unsalted butter softened

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare an 8-inch baking dish with non-stick spray or parchment paper.
  2. In a microwave-safe bowl, melt the unsalted butter.
  3. Transfer the melted butter to a large mixing bowl and mix in the sugar, eggs, and vanilla extract until well combined.
  4. Gradually add the flour, cocoa powder, baking powder, and salt, mixing until smooth.
Baking
  1. Spread the brownie batter into the prepared dish and bake for 30 to 35 minutes or until a toothpick comes out clean.
  2. Allow the brownies to cool completely.
Frosting
  1. In a small bowl, dissolve the instant coffee in heavy whipping cream and set aside.
  2. Beat the softened unsalted butter until light and fluffy, then gradually mix in the powdered sugar.
  3. Incorporate the coffee cream until the desired frosting consistency is achieved.
Serving
  1. Frost the cooled brownies generously with the coffee frosting, slice, and serve.

Notes

For a gourmet touch, add a pinch of sea salt to the frosting. You can also substitute espresso powder for instant coffee for a deeper flavor.
