Ingredients
  

For the crust
  • 22 pieces regular Oreos
  • 4 tablespoons salted butter melted
  • 1/8 teaspoon salt
For the filling
  • 8 ounces bittersweet chocolate melted and cooled
  • 1 1/4 cups heavy cream divided
  • 1/4 cup powdered sugar for the filling
  • 1 cup granulated sugar
  • 4 large eggs room temperature
  • 3/4 cup unsalted butter room temperature
  • 1 tablespoon vanilla bean paste or extract
For the topping
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • chocolate curls for garnish

Method
 

Preparation of the crust
  1. In a food processor, pulse the Oreos until fine crumbs form.
  2. Add the melted salted butter and salt, pulse until combined.
  3. Transfer the mixture to a 9-inch pie dish and press into the bottoms and sides.
Making the filling
  1. Break the bittersweet chocolate into pieces and melt in the microwave in 20-second intervals, stirring until fully melted. Set aside.
  2. In a separate bowl, beat 1 1/4 cups of heavy cream and 1/4 cup powdered sugar until stiff peaks form, then chill.
  3. In a saucepan over medium heat, whisk the granulated sugar and eggs until the mixture reaches 160°F.
  4. Remove from heat and stir in the melted chocolate.
  5. In a stand mixer, cream the unsalted butter and vanilla bean paste for 3 minutes.
  6. Slowly add the cooled chocolate mixture while mixing on low, then beat for an additional 5 minutes on medium-high.
  7. Fold the chilled whipped cream into the chocolate mixture.
  8. Pour the filling into the prepared crust and refrigerate for at least 6 hours or overnight.
Topping the pie
  1. Whip the remaining 1 cup of heavy cream, 2 tablespoons of powdered sugar, and 1 teaspoon of vanilla extract until soft peaks form.
  2. Spread the whipped cream over the pie and top with chocolate curls before serving.

Notes

Serve chilled for best texture. Store tightly covered in the refrigerator for up to 3 days. You can prepare the crust and filling separately and assemble before serving.
