Preparation
- Preheat your oven to 475°F (245°C) and place a pizza stone or baking tray inside to heat.
- On a floured surface, stretch or roll the dough into a thin circle and transfer to parchment paper or a floured pizza peel.
- Spread mozzarella evenly over the dough, add small pieces of gorgonzola, sprinkle with fontina or taleggio, and finish with parmesan.
- Drizzle with olive oil.
Cooking
- Slide the pizza onto the hot stone or baking tray.
- Bake for 8–12 minutes, until the cheese is bubbly and golden and the crust is crisp.
- Remove from oven, top with chopped herbs if using, slice, and serve hot.
Notes
Best served straight out of the oven with a light salad or a glass of wine. Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in the oven at 350°F (175°C) for about 10 minutes.
