Ingredients
  

Dough and Cheese
  • 1 piece pizza dough (store-bought or homemade)
  • cup shredded mozzarella cheese (or 1 ball of fresh mozzarella)
  • ¼ cup crumbled gorgonzola or blue cheese
  • ¼ cup shredded fontina or taleggio
  • 2 tbsp grated parmesan cheese
  • 1 tbsp olive oil
Garnishing and Shaping
  • to taste Fresh parsley or basil for garnish optional
  • as needed amount Flour for shaping the dough

Method
 

Preparation
  1. Preheat your oven to 475°F (245°C) and place a pizza stone or baking tray inside to heat.
  2. On a floured surface, stretch or roll the dough into a thin circle and transfer to parchment paper or a floured pizza peel.
  3. Spread mozzarella evenly over the dough, add small pieces of gorgonzola, sprinkle with fontina or taleggio, and finish with parmesan.
  4. Drizzle with olive oil.
Cooking
  1. Slide the pizza onto the hot stone or baking tray.
  2. Bake for 8–12 minutes, until the cheese is bubbly and golden and the crust is crisp.
  3. Remove from oven, top with chopped herbs if using, slice, and serve hot.

Notes

Best served straight out of the oven with a light salad or a glass of wine. Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in the oven at 350°F (175°C) for about 10 minutes.
