Ingredients

Main Ingredients
  • 1 whole butternut squash, peeled, seeded, and cut into 1-inch cubes
  • 2 tablespoons olive oil (or avocado oil)
  • 1 teaspoon smoked paprika Substitute with sweet paprika for a milder flavor
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried thyme (optional) Increase to 1 tsp for more flavor

Method

Preparation
  1. Peel the butternut squash, remove the seeds, and cut it into 1-inch cubes, ensuring they are uniform for even cooking.
  2. In a large mixing bowl, toss the squash cubes with olive oil, smoked paprika, garlic powder, salt, black pepper, and dried thyme. Mix until evenly coated.
Cooking
  1. Preheat the air fryer to 400°F (200°C) for about 3 minutes.
  2. Place the seasoned squash cubes in the air fryer basket in a single layer, avoiding overcrowding.
  3. Air fry the squash cubes for 15 minutes, shaking the basket halfway through, and keeping an eye on them to prevent over-browning.
  4. Check for doneness; the squash cubes should be golden and slightly caramelized on the edges but tender in the center. If needed, continue cooking for an additional 2-3 minutes.
  5. Transfer the cubes to a serving dish and enjoy them hot, optionally sprinkling with fresh herbs for added color.

Notes

Cool completely, then store in an airtight container in the refrigerator for up to 4 days. Reheat in the air fryer or a skillet before serving.
