Preparation
- Grease a 19cm square cake pan and line the base and sides with baking paper.
- Arrange 15 lamington fingers side by side in the base of the pan in a single layer.
- In a stand mixer, beat the cream and condensed milk on medium speed until soft peaks form.
- Pour two-thirds of the creamy mixture over the lamington fingers, creating a layer.
- In a small bowl, mix the raspberry jam and lemon juice until combined.
- Dollop the jam mixture over the cream and gently swirl it through with a butter knife.
- Layer the remaining lamington fingers on top, matching the pattern of the bottom layer.
- Cover with plastic wrap and freeze for 6 hours, or overnight, until firm.
Serving
- Unmold onto a chopping board and cut into small sandwiches.
- Serve immediately for the best texture and flavor.
