  • 30 pieces store-bought lamington fingers
  • 600 ml thickened cream Must be thickened cream for the right texture.
  • 395 g can sweetened condensed milk Contributes to the creaminess of the filling.
  • 2/3 cup raspberry jam Can be substituted with other fruit jams.
  • 2 tsp lemon juice Adds brightness to the flavor.

Method
 

Preparation
  1. Grease a 19cm square cake pan and line the base and sides with baking paper.
  2. Arrange 15 lamington fingers side by side in the base of the pan in a single layer.
  3. In a stand mixer, beat the cream and condensed milk on medium speed until soft peaks form.
  4. Pour two-thirds of the creamy mixture over the lamington fingers, creating a layer.
  5. In a small bowl, mix the raspberry jam and lemon juice until combined.
  6. Dollop the jam mixture over the cream and gently swirl it through with a butter knife.
  7. Layer the remaining lamington fingers on top, matching the pattern of the bottom layer.
  8. Cover with plastic wrap and freeze for 6 hours, or overnight, until firm.
Serving
  1. Unmold onto a chopping board and cut into small sandwiches.
  2. Serve immediately for the best texture and flavor.

Notes

Best served with a hot cup of tea or coffee. Store leftovers in an airtight container in the freezer and enjoy within a week.
