Preparation
- Preheat your oven to 350°F (175°C) and grease a muffin tin.
- In a bowl, whisk together the flour, baking powder, and salt.
- In another bowl, blend the softened butter and granulated sugar until light and fluffy.
- Add the egg and vanilla extract to the mixture, stirring until well combined.
- Slowly incorporate the flour mixture into the wet ingredients, being careful not to over-mix.
- Spoon the dough into the greased muffin cups, filling each about halfway.
Cheesecake Filling
- In a separate bowl, beat together the cream cheese, powdered sugar, and remaining vanilla until smooth.
- Dollop the cream cheese mixture on top of each cookie cup.
Baking
- Bake in the preheated oven for 15-18 minutes until the edges turn golden brown.
- Allow to cool in the tin before serving.
