Ingredients
  

For the Cookie Base
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened Ensure butter is at room temperature.
  • 1/2 cup granulated sugar
  • 1 large egg At room temperature.
  • 1 teaspoon vanilla extract
For the Cheesecake Filling
  • 1 package (8 oz) cream cheese, softened Ensure cream cheese is at room temperature.
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, blend the softened butter and granulated sugar until light and fluffy.
  4. Add the egg and vanilla extract to the mixture, stirring until well combined.
  5. Slowly incorporate the flour mixture into the wet ingredients, being careful not to over-mix.
  6. Spoon the dough into the greased muffin cups, filling each about halfway.
Cheesecake Filling
  1. In a separate bowl, beat together the cream cheese, powdered sugar, and remaining vanilla until smooth.
  2. Dollop the cream cheese mixture on top of each cookie cup.
Baking
  1. Bake in the preheated oven for 15-18 minutes until the edges turn golden brown.
  2. Allow to cool in the tin before serving.

Notes

Store the cookie cups in an airtight container in the refrigerator for up to five days. Allow flavors to mingle for enhanced taste.
