Ingredients
  

For the sable disks
  • 160 g flour 00
  • 70 g cold butter Ensure the butter is cold for better texture.
  • 55 g powdered sugar
  • 1 yolk yolk
  • 1 spoonful cold water
  • 1 pinch salt
For the mascarpone whipped cream
  • 200 g mascarpone
  • 250 ml fresh cream Make sure it's cold.
  • 45 g powdered sugar For assembly.
  • 1 teaspoon vanilla
For assembly and decoration
  • 8 whole syrup cherries (Type amarena)
  • 90 g pistachio grain For coating the edges.
  • 8 pieces fresh raspberries
  • Small pieces edible flowers For garnish.
  • Fresh leaves mint leaves For garnish.

Method
 

Preparation of Sable Disks
  1. Mix flour, cold butter, powdered sugar, yolk, cold water, and salt to form a smooth dough.
  2. Shape into a roll and refrigerate for 30 minutes.
  3. Roll out to 2mm thickness and cut out 16 discs (5-6 cm).
  4. Bake at 170°C for 8-10 minutes until golden and flaky.
Making Mascarpone Whipped Cream
  1. Whip together mascarpone, fresh cream, powdered sugar, and vanilla until soft yet stable.
  2. Place the cream into a pastry bag fitted with a smooth nozzle.
Assembly
  1. On each base disk, create a thick cream ring and nestle a whole cherry in the center.
  2. Cover with another disk to form a sandwich.
  3. Coat the edge of the top disk with cream and press pistachio grain into it.
  4. Create a wide swirl of cream on top and add a raspberry, two flowers, and a mint leaf.

Notes

Keep these mini desserts refrigerated for up to 2 days. Serve fresh for the best texture.
