  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened Make sure it's at room temperature.
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 2 tsp vanilla extract
  • 2 tsp chai spice blend Can include cinnamon, cardamom, ginger, and cloves.
  • ½ tsp salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth and fluffy.
  3. Mix in the vanilla extract and chai spice blend until combined.
  4. Gradually add the all-purpose flour and salt until the dough comes together.
  5. Scoop tablespoon-sized balls of dough onto the prepared baking sheets, leaving space for expansion.
Baking
  1. Bake in the oven for 12-15 minutes or until lightly golden around the edges.
  2. Allow to cool on the baking sheet for a moment before transferring to a wire rack.

Notes

For extra crunchiness, chill the dough for about 30 minutes before shaping. Experiment with flavors by adding a pinch of nutmeg or orange zest.
