Ingredients
  

Dough Ingredients
  • 1 cup warm milk (120 degrees Fahrenheit)
  • 2 ½ teaspoons active dry yeast
  • 2 large eggs at room temperature
  • ½ cup salted butter, softened
  • ½ cup granulated sugar
  • 2 teaspoons ube extract
  • 1 teaspoon salt
  • 4 cups all-purpose flour
  • 1 ¾ cups ube halaya/jam
  • ½ cup brown sugar (optional)
  • 1-2 teaspoons Saigon cinnamon powder
  • ½ cup heavy cream (optional) For pouring over the risen rolls
Frosting Ingredients
  • 1 ½ cups confectioners’ sugar
  • ¼ cup butter (softened)
  • 1 package (8 ounces) cream cheese, softened
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt

Method
 

Dough Preparation
  1. In a bowl, combine warm milk, yeast, and a tablespoon of sugar. Let sit for about 5 minutes until bubbly.
  2. Add ube extract to the yeast mixture.
  3. In a separate bowl, mix the yeast mixture with eggs, softened butter, granulated sugar, salt, and all-purpose flour until a soft dough forms.
  4. Knead the dough for about 10 minutes until elastic.
  5. Cover the dough and let it rise in a warm place until doubled in size.
Rolling and Filling
  1. Once the dough has risen, roll it into a 20×10 rectangle.
  2. Spread ube halaya over the dough, and sprinkle brown sugar and cinnamon mix on top.
  3. Roll the dough into a log and slice it into pieces using dental floss.
  4. Place the rolls in a baking pan and let them rise again for 30 minutes to 1 hour.
Baking
  1. Preheat the oven to 325 degrees Fahrenheit.
  2. Pour heavy cream over the rolls before baking.
  3. Bake for 30-35 minutes or until the internal temperature reaches 180-190 degrees.
Frosting Preparation
  1. Blend softened cream cheese and butter until combined.
  2. Add vanilla extract and powdered sugar, mixing until fluffy.
  3. Spread frosting over warm rolls before serving.

Notes

Store rolls in an airtight container at room temperature for up to three days or refrigerate for about a week. For long term, freeze for up to three months.
