Preparation
- Preheat your oven to 350 degrees F (180 degrees C) and spray a mini muffin pan with baking spray.
- In a food processor, pulse graham crackers until finely ground. Add brown sugar and salt, pulsing again to combine.
- Pour in melted butter and pulse until the mixture is evenly moistened.
- Divide the mixture among mini muffin cups, pressing down to create crusts.
- Bake in the oven for about 4 to 5 minutes until the crusts puff up and are golden.
Assembly
- While the crusts bake, prepare the chocolate and marshmallows.
- Place a square of chocolate on each crust and top with a marshmallow half, cut side down.
- Bake again for about 2 to 4 minutes until marshmallows are puffed, or broil for 1 to 3 minutes until golden brown.
Cooling
- Let the bites cool for about 10 to 15 minutes, then gently prod them out of the muffin pan.
- Serve warm or at room temperature.
Notes
These bites can be accompanied by fresh berries or vanilla ice cream for extra flavor. Use sea salt on top for a sweet-and-salty taste. Experiment with different chocolates or add chopped nuts for variety. Store leftovers in an airtight container at room temperature for a day or two.
