Ingredients
  

For the crust
  • 1 can baking spray containing flour, such as PAM Baking For greasing the muffin pan
  • 9 whole graham crackers Crushed finely
  • 3 tablespoons firmly packed brown sugar
  • 1 pinch salt
  • 5 tablespoons unsalted butter, melted
For the filling
  • 2 (1.55 ounce) Hershey's chocolate bars Broken into squares
  • 12 large marshmallows Halved

Method
 

Preparation
  1. Preheat your oven to 350 degrees F (180 degrees C) and spray a mini muffin pan with baking spray.
  2. In a food processor, pulse graham crackers until finely ground. Add brown sugar and salt, pulsing again to combine.
  3. Pour in melted butter and pulse until the mixture is evenly moistened.
  4. Divide the mixture among mini muffin cups, pressing down to create crusts.
  5. Bake in the oven for about 4 to 5 minutes until the crusts puff up and are golden.
Assembly
  1. While the crusts bake, prepare the chocolate and marshmallows.
  2. Place a square of chocolate on each crust and top with a marshmallow half, cut side down.
  3. Bake again for about 2 to 4 minutes until marshmallows are puffed, or broil for 1 to 3 minutes until golden brown.
Cooling
  1. Let the bites cool for about 10 to 15 minutes, then gently prod them out of the muffin pan.
  2. Serve warm or at room temperature.

Notes

These bites can be accompanied by fresh berries or vanilla ice cream for extra flavor. Use sea salt on top for a sweet-and-salty taste. Experiment with different chocolates or add chopped nuts for variety. Store leftovers in an airtight container at room temperature for a day or two.
