  • 12 oz fully ripened and tender mangoes, peeled, pitted, and diced Ensure mangoes are fully ripened for the sweetest flavor.
  • 2 tbsp cold water
  • 1.5 tbsp gelatin or 1.5 tsp agar agar powder for a vegan version Use agar agar for a vegan option.
  • 1.5 tbsp white granulated sugar
  • 0.54 cups coconut milk (full fat) or substitute with evaporated milk, heavy cream, or evaporated coconut milk For dairy-free option, stick with coconut milk.
  • 4 tbsp evaporated milk or coconut milk for a vegan version Choose coconut milk for vegan option.

Method
 

Preparation
  1. Transfer the mango chunks to a blender and blend until smooth.
  2. Strain the puree through a fine sieve if a smoother texture is desired.
  3. In a small bowl, mix the cold water with the gelatin until well hydrated.
  4. In a mixing bowl, whisk together the sugar, coconut milk, and mango puree until combined.
Cooking
  1. Gently heat the mixture in a pot over low flame until the gelatin dissolves completely. Do not boil.
  2. Pour the mixture into serving bowls or molds.
Setting
  1. Refrigerate for at least 6 hours or overnight until set.
Serving
  1. Garnish with a sprig of mint or toasted coconut before serving.

Notes

Store sealed in an airtight container in the refrigerator for up to three days. Consider adding lime juice for an extra flavor boost.
