Preparation
- Preheat your oven to 350°F (180°C) or 320°F (160°C) for fan-forced baking.
- In a large mixing bowl, beat the butter with an electric mixer until creamy.
- Fold in the icing sugar and vanilla extract, mixing until smooth.
- Sprinkle in the flour and mix until a soft dough forms.
- Fold in the mini M&Ms.
- Transfer the dough onto a sheet of baking paper, shape into a log, and wrap tightly.
- Refrigerate for at least 30 minutes.
Baking
- Slice the chilled log into ½-inch rounds.
- Arrange the slices on a baking sheet lined with parchment paper.
- Bake for 12 to 14 minutes or until the edges are light golden.
- Let the cookies cool completely before serving.
Notes
Store cookies in an airtight container at room temperature for up to one week. They can also be frozen for up to three months.
