For the praline mixture
  • 1.5 cups pecans (halved or chopped) For an extra touch, toast your pecans lightly in the oven before adding.
  • 1.5 cups sugar
  • 3/4 cups brown sugar
  • 6 tablespoons unsalted butter (cubed)
  • 1/2 cup evaporated milk (not sweetened condensed milk) Crucial for the perfect texture.
  • 1 teaspoon vanilla Adds depth of flavor.

  1. Prepare a muffin tin with cupcake liners.
Cooking
  1. In a large pot, combine all the ingredients over medium-high heat and stir gently but consistently.
  2. Monitor the candy thermometer, aiming for a temperature of 235-240°F, which usually takes about 10 minutes.
  3. Once the right temperature is reached, remove the pot from heat and vigorously stir the mixture until it thickens and becomes cloudy, which should take about 2-5 minutes.
  4. While still warm, use a cookie scoop to spoon the mixture into each cupcake liner, ensuring the bottoms are well covered.
  5. Allow the pralines to cool completely until they firm up.
  6. Once cooled, gently peel away the cupcake liners before serving.

Notes

They can be stored in an airtight container at room temperature for about a week. Best enjoyed with coffee or sweet tea, and they make lovely gifts.
