  • 1 cup smooth peanut butter
  • 11 oz butterscotch chips
  • 4 cups chow mein noodles
  • 1 cup roasted peanuts Optional

Preparation
  1. In a microwave-safe bowl, combine the smooth peanut butter and butterscotch chips.
  2. Microwave the mixture in 20-30 second intervals, stirring in between until fully melted and combined.
  3. Gently fold in the chow mein noodles and the roasted peanuts (if using) until well coated.
  4. Take spoonfuls of the mixture and form haystacks on a sheet of wax paper.
  5. Allow them to cool and set at room temperature.

Notes

Store in an airtight container at room temperature for up to a week. For extended freshness, refrigerate. Experiment by substituting chow mein noodles with pretzels or adding dried fruit for variety.
