- In a microwave-safe bowl, combine the smooth peanut butter and butterscotch chips.
- Microwave the mixture in 20-30 second intervals, stirring in between until fully melted and combined.
- Gently fold in the chow mein noodles and the roasted peanuts (if using) until well coated.
- Take spoonfuls of the mixture and form haystacks on a sheet of wax paper.
- Allow them to cool and set at room temperature.
Notes
Store in an airtight container at room temperature for up to a week. For extended freshness, refrigerate. Experiment by substituting chow mein noodles with pretzels or adding dried fruit for variety.
