- Scoop tablespoonfuls of dough onto the prepared sheets, leaving space to spread.
Baking
- Bake for 8-15 minutes until they lose their glossy sheen and are golden.
- Let the cookies cool.
Making the Filling
- Beat together the butter, peanut butter, and salt until smooth.
- Mix in powdered sugar and vanilla, adjusting with heavy cream for consistency.
Assembly
- Pipe a dollop of peanut butter filling onto half of the cooled cookies and sandwich with the remaining cookies.
Notes
Store in an airtight container at room temperature for up to a week. Can be frozen for up to three months.
