Dough ingredients
  • 190 g all-purpose flour
  • 150 g Greek yogurt Can substitute with regular yogurt.
  • 1 tsp baking soda
  • 4 g salt

Method
 

Preparation
  1. In a large bowl, combine the Greek yogurt, flour, salt, and baking soda. Stir it together until a smooth dough emerges.
  2. Transfer the dough to a floured surface and knead it for a few minutes until it feels soft and elastic.
  3. Wrap the dough in plastic and let it rest for 30 minutes.
  4. After resting, divide the dough into four equal pieces and roll each piece into a ball. Flatten each ball into discs.
  5. Cover the discs with a cloth and let them rest for another 30 minutes.
Cooking
  1. Heat a pan over medium-high heat and place one disc in the pan.
  2. Flip the bread frequently until it forms bubbles and blisters on the surface.
  3. Watch the bread puff up and cook until golden brown, approximately a few minutes.
  4. Cut open one end of the balloon bread to stuff with your favorite fillings.

Notes

Serve warm straight from the pan. Store leftovers in an airtight container in the fridge for up to three days.
