Ingredients
  

Wet Ingredients
  • cup ghee Can be replaced with coconut oil for vegan option.
  • ¼ cup honey Use maple syrup for a vegan option.
  • ¼ cup brown sugar Can be reduced or omitted for a sugar-free version.
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 3 cups old fashioned rolled oats Use certified gluten-free oats for a gluten-free option.
  • 1 cup raw walnuts Chop roughly for texture.
  • cup raw shelled pistachios Can be substituted with hazelnuts for variation.
  • cup slivered almonds
  • 1 1/2 teaspoons cinnamon
  • ½ teaspoon nutmeg
  • 1 teaspoon sea salt

Method
 

Preparation
  1. Preheat the oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper and set it aside.
  2. In a small bowl, add the ghee, honey, brown sugar, and vanilla. Whisk to combine.
  3. In a second large bowl, add the dry ingredients (oats, walnuts, pistachios, almonds, cinnamon, nutmeg, salt) and toss to combine.
  4. Slowly pour the wet ingredients on top of the dry and stir until everything is well coated.
Baking
  1. Arrange the granola in a single layer on the baking sheet. Bake for 20-22 minutes or until golden, stirring halfway through.
  2. Cool completely before breaking apart. Store in an airtight container.

Notes

Chop some walnuts and pistachios roughly for a mix of textures. Press the granola down gently on the pan before baking to encourage clusters. Watch during the last 5 minutes to prevent burning.
