  • 1/2 cup unsalted butter, softened to room temperature
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 cups all-purpose flour
For the royal icing
  • 3 cups confectioners' sugar
  • 2 tablespoons meringue powder
  • 1/4 cup room temperature water
  • 1/2 teaspoon vanilla extract (for icing)

Method
 

Preparation
  1. In a large mixing bowl, cream butter and sugar together until light and fluffy.
  2. Add egg and vanilla, mixing until combined.
  3. Turn the mixer to low speed and add baking powder and salt, then gradually add flour, mixing until fully combined.
  4. Form the dough into a ball and wrap tightly in plastic wrap. Freeze for 30 minutes or refrigerate until firm.
Baking
  1. Preheat oven to 350°F and line a baking pan with parchment paper.
  2. Roll out the dough on a floured surface to 1/4 inch thick and cut out shapes with an egg-shaped cookie cutter.
  3. Place cookies on the baking sheet and bake for 8-10 minutes until edges are golden.
  4. Cool cookies on a wire rack.
Making the Royal Icing
  1. Mix confectioners' sugar and meringue powder in a bowl.
  2. Add water and vanilla, mixing until smooth. Adjust consistency as needed.
  3. Color icing with gel food coloring.
Decorating
  1. Use piping tips to outline and decorate cookies.
  2. Allow icing to set completely before storing.
