Ingredients
  

Brownie Batter
  • 200 g dark chocolate (7 oz), between 65-75% cocoa Use high-quality chocolate for best results.
  • 7 tbsp unsalted butter (100g) Softened for easier mixing.
  • 1/4 cup Dutch processed cocoa powder (25g)
  • 2 large eggs, room temperature Helps achieve better texture.
  • 3/4 cup granulated sugar (150g)
  • 1/4 cup light brown sugar (50g)
  • 1 tsp instant coffee + 1 tsp hot water Enhances chocolate flavor.
  • 3/4 cup all-purpose flour (98g) Can be substituted for gluten-free flour.
  • 1/4 tsp baking powder
  • 1/2 tsp salt
Topping
  • 5 cups shredded kataifi (200g) Creates a lovely texture.
  • 6 tbsp unsalted butter, melted (85g)
  • 1/2 tsp to 3/4 teaspoon salt
  • 1 1/3 cup pistachio cream (370g) + more for decoration
  • 3 tbsp tahini (optional; replace with more pistachio cream if not using)
Ganache
  • 1/2 cup heavy cream (120g)
  • 150 g chopped milk or semi-sweet chocolate

Method
 

Preparation
  1. Preheat your oven to 335°F and brush a 9×9 inch pan with softened butter, then add parchment paper for easy removal.
  2. In a saucepan, melt the chocolate and butter together, and mix in the cocoa powder until well blended.
  3. In a separate bowl, whisk together the eggs, granulated sugar, and brown sugar until they become light and fluffy.
  4. Combine the melted chocolate mixture with the egg mixture and add the instant coffee dissolved in hot water.
  5. Fold in the flour, baking powder, and salt gently, ensuring you retain some airiness in the batter.
  6. Pour the batter into your prepared pan and bake for 23-25 minutes.
Cooling and Topping Preparation
  1. Once baked, allow the brownies to cool for 10 minutes, then transfer to the fridge to chill for about 30 minutes.
  2. While cooling, mix the kataifi with melted butter and bake until golden, creating a crispy texture.
Final Assembly
  1. Combine crispy kataifi with pistachio cream, tahini, and salt, spreading over the chilled brownies.
  2. Melt heavy cream with chopped chocolate, stirring until smooth for the ganache.
  3. Pour ganache over the pistachio layer once cooled and add more pistachio cream on top.
  4. Let it chill before slicing. Serve at room temperature or chilled.

Notes

Serve with ice cream or whipped cream for an elevated experience. Top with chopped pistachios or more pistachio cream for garnish.
