Preparation
- Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, whip the egg whites with an electric mixer until they start to foam.
- Add the cream of tartar and continue to whip until soft peaks form.
- Gradually add the granulated sugar or sweetener, one tablespoon at a time, while continuing to whip until stiff peaks form.
- Gently fold in the cocoa powder, extracts, and chocolate chips.
Baking
- Drop spoonfuls of the mixture onto the prepared baking sheet, leaving space between them.
- Bake in the preheated oven for about 30 minutes until they are crisp on the outside but still soft inside.
- Once baked, turn off the oven and leave the cookies inside for an additional hour to cool and set completely.
Notes
Store these cookies in an airtight container at room temperature. They can last up to a week. Consider freezing them for longer storage.
